What is the hanging carcass weight (HCW)?

The HCW is the weight of the cow after the blood, hide, head and other inedible parts are removed. The hanging weight is about 55% of the live weight. That does not include offal.

Why use the hanging carcass measurement?

o We use this weight measurement because we’re not selling individual retail cuts—we’re offering beef by the half or whole animal. It’s the fairest and most straightforward way for both you and us to conduct the sale.

Hanging Carcass Weight vs. Boxed Weight

o Hanging Carcass Weight: This is the weight of the butchered animal as it hangs in the locker to dry age (10-14 days). This weight does not include the organs, head, hide, hooves, blood and innards, which have been removed.o Boxed Weight: This is the net weight of the meat you will receive that is packaged and ready for your freezer. This is about 55% yield (this yield can vary!) of the hanging carcass weight.

How much freezer space will I need?

20-25lbs of product requires approximately 1 cu.ft of freezer space.

What is the average turnaround time?

Average turnaround times are between 2-3 weeks but you can always place a deposit for a specific date down the road. The wait list can get longer at our busy times of the year.

We process year-round and treat every customer like family, making sure you get individualized and quality service that’ll keep you coming back for more.

Step 1: Place your order with a refundable deposit

– Select the month you want your animal processed during checkout

Half Cow Deposit: $250

Whole Cow Deposit: $500

The deposit holds your place in line for a half or whole cow and is deducted from your final total. The deposit is entirely refundable if anything changes before your purchased half/whole cow is sent for processing.

Step 2: The Cut Sheet (completely customizable with custom cut options)

With your order confirmation e-mail you will receive our cut sheet. We will set a time and date for a phone call to walk you through the cut sheet and ensure you get the cuts that fit your needs.

Step 3: Your cow is sent for processing and packaging

Your cow will be delivered to the butcher and aged at least 10 days (longer if you prefer).

All cuts are individually vacuum-sealed and labeled at a Texas State/USDA inspected butcher.

Step 4: Final payment and delivery/pickup/shipping

We notify you when your half/whole cow is ready and, depending on your location, schedule either delivery, pickup or ship your order to you. Your remaining balance is due upon delivery, pickup or prior shipping. We do not charge sales tax, and do not include any additional fees in the base price. Shipping/delivery fees may apply. We accept Credit, Check, and Cash. Please note a 3% processing fee is applied to credit card payments.
